Dinner Tonight: Tuna Soup

Tonight we have an event at my daughter’s school from 6-7pm, right when we are usually eating dinner. We’ll need to get home and eat immediately as I’m sure we’ll all be hungry and tired. I don’t want a late night because we’ve got a very busy few days ahead of us. I have a small bit of time for prep before I leave. It’s also very cold outside! And we’re kind of sick of pasta and of beans, so I’ll rule them out unless I can’t find another solution.

In short, I need something that is basically done by the time I leave, can be heated up quickly, is warming, and isn’t pasta or beans. Sounds like a soup. I remember that we used to make a canned-tuna and potato soup last winter that was a big hit. That’s it!

I’ve got a few potatoes, tuna, some vegetable stock and plenty of odds and ends for garnish. We’ve got leftover rice to bulk it up, and if we’re all really famished I’ll fry some eggs to put on top. Do I take it in more of an eastern or western direction? I can’t decide, so I’ll just see how it comes together.

Steps: Heat up and season the broth, slice potatoes and cook them in it before I leave. Choose and wash garnishes (lemon, green onion, spicy peppers, ginger, herbs) before leaving. On returning, add tuna to the broth and warm it up again. Fry some eggs if anyone is exceptionally hungry. Reheat rice and prep garnishes while the soup is heating. Then eat!
