Dinner Tonight: Curry night with cooked pumpkin

We’ve got loads of chopped onion, chopped jalapenos and cooked pumpkin leftover from our pumpkin party on Saturday. So I’ll make a curry out of them, reserving some of the pumpkin to serve in a less spicy manner to my daughter. We have a small amount of leftover chickpeas as well, which I’ll simply warm up with no seasoning so that all of us will eat them. I’ll set up the basmati rice in the rice cooker, heat up some frozen naan and serve it all with yogurt. That’s all!

There was no time for taking pictures, so the photo above is of the leftovers, which we all ate the next day. They were excellent.
